Tim Wildman is a British Master of Wine who spends his life bouncing between the UK and Australia making fun and fizzy wines that happen to be really good. He's got a few projects going, but Piggy Pop is the one we keep coming back to.

This 2024 is a blend of Nero d'Avola, Lagrein, Montepulciano, Prieto Picudo, Canada Muscat, Aglianico, from Riverland. Which sounds like a lot, but somehow it all just works. A cooler than average vintage in South Australia meant no days over 40 degrees, so the fruit ripened slowly, keeping all that freshness and acidity intact. The reds fermented together with some whole clusters, pressed early to keep the colour light and the tannins just grippy enough. Wild yeast, no additives, bottled with a little residual sugar that finished fermenting in bottle. Zero sulphur, unfined, unfiltered. All the good stuff.

The colour is this tangerine pink that sits somewhere between a dry rosé and a chillable red. Explosive on the nose: peach, apricot, red cherry. Blood orange and pomegranate with a little raspberry salted liquorice thing on the finish. It's fun, it's fizzy, it's exactly what you want when you don't want to think too hard about what you're drinking. Just chill it and go.
