Understanding Sake with Mariko Tajiri x Hakko Gakko — Wed, November 11th
This tasting will take place on Wednesday, November 11th, from 7 to 8:15pm.
For one night only, we are forgetting about wine and we are handing the Counter over to our friend and sake-expert Mariko Tajiri (Hakko Gakko!) so she can explain sake to us and we can finally understand what it actually is.
Sake isn't rice wine. It's a brewed beverage, more similar to beer than to wine. It has a magic ingredient called koji, which is a fascinating universe into itself, known as the national fungus of Japan. Without it, we wouldn't have soy sauce! Without it, we wouldn't have miso! Without it, we wouldn't have sake!
Mariko has been nurturing the wine and sake industry in Toronto for years with her knowledge, and most recently with her own importing agency, Kyabetsu Imports. And we cannot be more excited to have her taking over the Counter for a night!
