Riesling, Pinot Gris, and Vidal

Amanda Schroeder grew up among the bottles in her mom's Alberta wine shop, but it was Ontario that became her home. After years in the not-for-profit world, she decided to make the wines she felt were missing here.

The blend is 58% Riesling, 30% Vidal, and 12% Pinot Gris. Three grapes, three different skin contact times. The Riesling got the longest, 48 days on its skins to build texture and tannin. The Vidal had 21 days for aromatic softness. The Pinot Gris had 15 days for florality. Punched down by hand twice a day during the wild ferment, then pressed off on November 19th. Aged six months in neutral French oak. Bottled unfined, unfiltered, with the lees.

Sits somewhere between funky and clean. Fresh lime, floral aromatics, orchard fruit, with a really nice, grippy tannic texture on the palate. Sun-warmed peach, dried apricot, bee pollen, a haze of wildflower honey.

Pair it with falafel with tahini, or a soft cheese plate with quince paste.
