Summer Wolff visited us in July and brought all her new beauties. We fell hard for 'Imo', her new Timorasso from Monferrato.
Timorasso has a story. It used to be one of the most planted white grapes in Piedmont in the 19th century, alongside Cortese. Then phylloxera hit. When the vineyards were replanted, most growers chose something else. Timorasso was difficult, ripened unevenly, easily attacked by disease.
Timorasso is a wonderful combination of stringent acidity and depth. The acidity is high, bright, refreshing, sometimes compared to Chenin Blanc or Riesling. But it also has this mouth-filling character that can fool you into thinking it's seen skin contact or barrel aging. The body comes from the grape itself. Yellow fruit, nuts, a saline kick.
Summer's version? Fermented and aged in stainless steel tanks. Fresh and textured.
