Poderi Cellario is a small family winery in Carrù—a village known as “the door to the Langhe”—where the high hills begin their steep climb toward the Alps. Here, in 1994, Fausto began crafting wine under his family’s name, but it was in 1998 that the story deepened: he married Cinzia, and with her came not just love, but legacy—her father, Tonio “Il Baffone”, and generations of unwritten recipes.

Today, their winery is a tribute to place and patience. They farm organically on slopes reaching 500 meters, working only with local grapes, fermented wild with near-zero intervention. It’s winemaking that feels less like science and more like respect—for the land, the family, and the traditions that define the Langhe.

This pét-nat is their most joyful creation. Named “Il Baffone” (The Man with the Moustache) after Cinzia's father Tonio—whose face graces the label and whose recipe they follow—it’s a fizz that’s equal parts history and happiness. A blend of Muscat and Favorita from vineyards perched at 500 meters (higher than Barolo!), it gets two days of skin contact before finishing fermentation in the bottle. 

The result is hazy, vibrant, and utterly delicious. It smells of wild fennel, black liquorice, and yellow flowers—an aromatic zero-zero punch that leads to a palate that’s fizzy, textured, and brimming with energy. A wine that asks for a picnic, a porch, or a party that’s just getting started.

Pair with fried squash blossoms, lemon-and-herb stuffed olives, or a platter of creamy Robiola cheese.
