Poderi Cellario is a small family winery in Carrù—a village known as “the door to the Langhe”—where the high hills begin their steep climb toward the Alps. Here, in 1994, Fausto began crafting wine under his family’s name, but it was in 1998 that the story deepened: he married Cinzia, and with her came not just love, but legacy—her father, Tonio “Il Baffone”, and generations of unwritten recipes. They farm organically, working only with local grapes, fermented wild with near-zero intervention.
The vino del popolo—the people’s wine—a litre of pure, unpretentious joy from the high hills of Carrù. Fausto and Cinzia Cellario blend Barbera and Dolcetto, co-ferment them for just a week, and bottle the result with zero fuss and maximum flavour.
Barbera brings its classic vibrancy and crunchy acidity; Dolcetto lends a rustic, earthy backbone. Together, they create something perfectly balanced and utterly delicious. This is red wine in its most essential form: no pretense, all pleasure.
The taste is a burst of dark berries—blackberry, blackcurrant, and baked plum—dustened with clove and crushed rocks. There’s a savoury edge of tart cranberry and pomegranate, all carried on a mineral-driven finish that keeps you reaching for the next glass.
Pair with weeknight pasta with tomato ragù, wood-fired pizza, or a hearty lentil stew. Better yet, just pour it.
