Max Brondolo is a nomad with roots. Though Podere Sottoilnoce is a first-generation winery, wine runs deep in his blood—his grandfather made wine in Asti, Piedmont, and passed that passion down to Max. Today, he tends seven biodynamic hectares under the shade of walnut trees (sotto il noce), but makes his wine wherever collaboration and community open a door. He’s a believer, not an owner—for now. His dream? To rebuild Emilian wine from the ground up, vine by forgotten vine.
Cattabrega is his joyful noise in a bottle—a coral-hued sparkler dialed up on vibes and dialed down on intervention. It’s a blend of Lambrusco Grasparossa, Sorbara, and rare Uva Tosca, all hand-harvested, all refermented in bottle with zero disgorgement, zero filtering, and barely any sulfur. The yeasts stay in, the vibes stay high.
This wine is loud, bright, and unapologetically fun: think wild strawberries, chilled watermelon, and a sprinkle of garden herbs lifted by subtle, spritzy bubbles and a savoury tang. It’s tart, playful, and perfectly hazy—the kind of wine that doesn’t just open a meal, it starts the party.
Pair with an aperitivo spread. Salty almonds, sneaky anchovies, or grilled pizzetta. Serve cool, not cold, and share with friends who aren’t afraid of a little cloudiness.
