Alberto and Barbara are the fourth generation to run Paltrinieri. In their hands, Sorbara (70%), the most delicate and thin-skinned of the Lambrusco grapes, becomes something taut, savoury, and quietly complex. Hand-harvested and fermented with native yeast on the skins for three days, it has a pale, energetic rosé hue and a dry, mineral-driven palate. Wild strawberry, fresh-cut watermelon, a sprinkle of white pepper, and fragrant sage. Lively, precise, nervy freshness. If we had to pair it with something, we'd go with a brown butter pasta with ricotta and roasted squash, topped with crispy sage.
