Carignan

Emilie and Brice Bolognini started their wine adventure together 20 years ago when they purchased a significant 27 hectares of abandoned vines. Since their first vintage in 2003, they've slowed their production, cut back to 15 hectares, converted to biodynamic agriculture, and planted hundreds of trees around the estate. Mimosa, pomegranate, olive, fig. All their work in the vines is done manually with the help of sheep during the winter. Intervention in the cellar is kept low. Indigenous yeasts, low inputs, minimal sulphites at bottling.

This is Les Salines. A rosé, deeply coloured, from a one-night maceration of old Carignan. The grapes come from three different clos, exclusively old vines, over 50 years old. Everything is done by gravity, no pumps, no filtration. Aged in old barrels over 10 years old. Totally without inputs, except for a pinch of sulphites at bottling, about 10mg/L.

It's winey and deep, with an aromatic impact that's completely liberated. Crushed strawberry, cherry, faded rose, orchard fruit. Pear, peach. A very grand gastronomic rosé, hedonistic, complex and obvious at the same time.
