When you first smell the wine there's a honey meets flinty town for a second, and then loads of orchard fruit follow as the flintiness makes space for it. There's a special brightness to it, almost like a thunderbolt. the wine is wild fermented in tank for about eight months, and it comes out with a very fun savoury feel and perfectly balanced.

Chenin Blanc
Savennières is one of the places that makes you believe that there is magic in wine. A tiny appellation in the Loire, just a handful of hills made of schist, where Chenin Blanc has been growing since the 9th century. If you know anything about natural wine, you probably know who Nicolas Joly is. The father of biodynamics in the Loire, the man who taught a whole generation that soil is alive and wine should taste like it.
Loïc Mahé worked alongside Joly for years. He farms 11 hectares, certified organic, hand-maintained. Grapes are picked by hand, and the work continues in the cellar with slow fermentation, native yeasts, minimal sulphites. He came to winemaking later than most, switched careers in his late 30s, and has since become one of the top winemakers in the Loire. His friend Philippe Brand says so. The New York Times says so. Jancis Robinson says the wines have "an unusual combination of nerve, concentration, and longevity."
