Domaine Rostaing Tayard 'Le Chant du Loup' 2023

Emmanuel Rostaing Tayard grew up in Savigny (the Savigny just outside of Lyon, not the one next to Beaune in Burgundy! Important distinction!) His village sits right on the border between two appellations: Beaujolais and Coteaux du Lyonnais. His grandparents passed on their love of nature, viticulture, and wine. In 2016, he felt the call and began his professional conversion, earning his diploma in Beaune and gaining experience in Burgundy, Beaujolais, and New Zealand.

In 2020, he had the opportunity to save the last Gamay vines in Savigny, in extremis. After intense work, he preserved the last parcel of old vines at Récy, brought it back to life, and became the only winemaker in Savigny. 

Today he farms 9 hectares across Savigny and Saint-Romain-de-Popey, all organic and biodynamic. The vines average 50 years old, planted on volcanic and granitic soils at altitude, with different exposures that give each parcel its own personality. The approach is low intervention: biodynamic preparations, teas, fermented extracts, with minimal copper and sulfur.

Le Chant du Loup is his 100% Chardonnay, from the Lyonnais vineyards, and it's all finesse and elegance. Citrus and hazelnut weave through a rocky, mineral spine that makes you think of those volcanic soils. The palate combines purity and power in a way that feels effortless. The finish is pure, fresh, and persistent. It's a revelation.
