This is Pinot Noir, hand-picked and whole cluster pressed in a small water-fed press, wild fermented with full malo, unfiltered and unfined, zero dosage, barely any sulphur.

Deepening gold colour. The nose is flinty, bready, brioche, then ripe pear, green apple, lemon curd, salinity, white flowers, I want to drink this forever-deliciousness level. Pinpoint minerality. Savoury stone fruits, biscuit and brioche, flint, bright and zesty citrus. I could talk about this forever, pure joy in the glass.

This is the wine you open when you want to celebrate something. And there is so much to celebrate.
