Raúl Moreno is a culinary-trained, globe-trotting savant who’s done it all: from making wine at Burgundy's iconic Domaine Dujac to cooking in Thomas Keller's kitchen. He’s the kind of person who collects skills, and now he’s using them all to rewrite the rules in Spain's sherry country.
La Noche is his vision for Chardonnay, planted over the famous albariza soils of Sanlúcar de Barrameda. The grapes get a 24-hour maceration, then the juice is fermented in a special, highly permeable clay vat. It’s aged on its lees and finished in old Amontillado barrels. The result is a wine of beautiful contradiction: it has a unique, glyceric texture and a slight oxidative character that perfectly balances its electric, upright acidity.
This is Chardonnay with a stark, singular character. A wine that could only come from this place, made by this man. It’s for when you want a white that’s as intellectually thrilling as it is delicious.
