This is Familia Baldassare's endorsed dry, dry, dry AF lambrusco. Did we say dry? Because it's dry. Made from Salamino grapes, it has this thick, intense smell of macerated black cherries, old cupboard spices, dry aged wood, a kind of dusty, savoury scent. It's not a lambrusco for the faint of heart! That grape-y, extra-juicy fun you find in most lambruscos? Not here. This is basically a lambrusco for grown-ups. Serious. Again, dry. But here's the thing: it's got so much freshness and perfect balance that it's dangerously easy to drink. You'll take a sip, raise an eyebrow, and suddenly your glass is empty.
Bring on the cured meats, the aged cheeses, something salty and savoury to bounce off that incredible acidity (ANCHOVIES?!). Or just drink it on its own while the sun goes down on Bickford Park's slopes. Either way, you've been warned.
