Filipa Pato & William Wouters '3B' Rosé Brut Nature

We love Bairrada! We love Baga! We love Filipa Pato! And honestly, what's not to love? This is a traditional method sparkling rosé, a blend of 70% Baga and 30% Bical, from 30-plus-year-old vines planted on chalky clay soils. Native ferment, nine months on lees, zero sugar, unfined and unfiltered. Just the way we like it.

It's tart with cranberry velvet-iness on the palate, a base of youthful rhubarb, subtle red currant, dried rose petals. Lean, lively, very mineral-driven, fresh, savoury!!!! All we need and want in a sparkling rosé. Nice with a plate of charcuterie and a bowl of olives, but also with any take-out. It will simply elevate anything.
