Melon de Bourgogne and Côt

We've been on a quest looking for fun, unexpected sparkling wines that aren't just straight-up Chardonnay or Pinot Noir. So imagine our delight when we came across a sparkling from the Loire made with Melon de Bourgogne, the same grape used in our favourite Muscadet, and 5% Côt, which is what they call Malbec in the Loire. Fay D'Homme makes their X Bulles the old way. The sugar from the grapes does all the work. It starts the fermentation. It creates the bubbles. It leaves a little residual sugar behind because that's just how it goes. But don't freak out, it's not sweet at all.

The Melon de Bourgogne brings salinity and minerality, very sea shoreline dreams. The Côt brings raspberry aromas that sneak in like a surprise guest at a party. When the balance is right, the bottles are riddled and disgorged. It's a true méthode ancestrale.

At 11.5% alcohol and less than 5 grams of residual sugar, it's dry, lively, and incredibly drinkable. Perfect as an aperitif, or just by itself. Drink it cold. Drink it now. That's all you need to know.
