Gamay
Elisa Guérin’s Beaujolais is sourced from her own vines in Moulin-à-Vent and Chiroubles, it’s Gamay with a foot in two worlds: the structural depth of one, the lifted perfume of the other. Using full carbonic maceration with a capped temperature, she locks in all those crunchy, primary fruit vibes without sacrificing the region’s signature drinkability.
The result is a vibrant, ruby-hued pour that smells like just-macerated cherries, wild raspberries, and a flicker of violet and white pepper. On the palate, it’s smooth and savoury, with a zing of fresh acidity and just the right kind of green—like snap peas, not stems. It’s fruity without being simple, earthy without being heavy.
Your move for weeknight roast chicken, herby lamb burgers, or jerk-spiced chicken with a fresh mango salsa.
