Domaine de Corbillières Touraine Sauvignon Blanc 2025

A century ago, Fabel Barbou planted a single vine of Sauvignon Blanc along a wall. And it paid off, because tnow his descendants farm 26 hectares of it, all organic, all thoughtful.

What I love about is that it's not the kind of Sauvignon Blanc that screams at you. No aggressive grassiness, no punch-you-in-the-face acidity. It's just zesty and citrusy with crunchy green apple and grapefruit on the palate and a crisp, clean finish. Kind of feels like Sancerre but way more affordable, which is great.

The vines are between 15 and 45 years old. Sandy clay soils. Native fermentations at controlled temperatures. Ageing on fine lees until spring. Balanced. Fresh. Exactly what you want from a Loire white.

Drink it with shrimp scampi, with oysters, with goat cheese, honestly any cheese.
