Nestled in the heart of Chablis, Domaine de Biéville was established by Jean-Jacques Moreau in the 1970s. What sets them apart is their singularity: a rare, unbroken tapestry of old vines nurtured under one family’s care for decades. With ideal south-facing exposure and soils that whisper of premier cru pedigree, this is terroir speaking clearly, faithfully. Today, Anne and Louis Moreau guide the estate, weaving four generations of dedication into every bottle.
This is Chablis at its most compelling: zesty lemon and grapefruit pith gently give way to a warm, mellow apricot olive oil cake. The palate is round and ripe, with tons of crisp green apple wrapped in a supple, creamy texture. All lifted by that classic Chablis minerality—stony, bright, and utterly refreshing.
Turn the oven on. Throw in a chicken. Roast it. Eat it. Or go the other route and pair this with seared scallops in brown butter, or a simple bowl of steamed mussels with thyme.
