Trebbiano Spoletino
Our obsession with mystic, Italian skin-macerated wines continues and knows no limits. We already stocked Collecapretta's Bianco back in the winter. Now we couldn't resist adding their longer-macerated orange to our shelves.
Collecapretta sits on the Colli Martani, 500 metres above sea level, and it's a full-circle farm: animals producing cheese and salami, crops for cereals, and 5 hectares of vines. The proximity of the Apennines means the grapes get all that fresh mountain air, and the soils are a mix of clay and iron with patches of tuff and travertine limestone.
Ten days of maceration brings out everything Trebbiano Spoletino has to offer. Ripe yellow fruit meets an explosion of Mediterranean herbs: rosemary, sage, maybe a little wild fennel. Crack this open next time you're cooking something fancy. Or to impress your next guests.
