Supernova is Ca'n Verdura's flagship white, made from the indigenous Moll grape (also called 'premsal' in other parts of the Mediterranean!), grown on call vermell soils. Red, iron-rich clay mixed with limestone and scattered with small galets. The grapes come from old bush-trained vineyards planted in the 1950s around Binissalem, including Santa Maria, considered the finest vineyards in the area. Cas Pastor, Cas Verd, Son Borrás, and Plà de Buc, all at 130 meters.

Hand-harvested. Cold settled for four days. 20% fermented in 500L French oak, the rest in stainless. Indigenous yeasts. Five months on the lees, three months of stirring in barrel. Low intervention, tiny production.

It's honestly the wine I've been thinking about before falling asleep since I tasted it a few days ago. It has this beautiful roundness that feels almost creamy, but then there's a lemony snap that cuts right through it. Citrus, chamomile, fresh herbs, fennel, white fruit. It's fresh and a bit salty. I feel like eating this with pickled things and fish.
