Tim Wildman is a British Master of Wine who spends his life bouncing between the UK and Australia making wines that are fun and fizzy and genuinely good. Not "good for natural wine" good. Just good.
A cult classic of the minimal intervention scene. Also utterly frivolous. Also "Australia's favourite pét-nat. The blend is Fiano, Malvasia Bianca, Pecorino, Nero d'Avola, Canada Muscat. Which is a lot of grapes to say "just drink it and stop overthinking." The colour is hazy, lava lamp orange. The smell is white peach and juicy clementines, bright and a little wild. The bubbles are there but they're not aggressive, more like a gentle tickle.
She's fun. That's the point. Chill it hard. Shake it gently before opening (yes, really). With caution.
