Merlot and Sauvignon Blanc
Therianthrpy bringing on the endless rosé for the endless summer we are dreaming of. It's a blend of Merlot and Sauvignon Blanc, which sounds like a strange pairing until you taste it and realize it makes perfect sense.
The Merlot comes from a certified organic vineyard in Beamsville Bench, 23-year-old vines, dry-farmed, farmed with permanent cover crops. The Sauvignon Blanc comes from Hunter Farms in Niagara Lakeshore, sustainably farmed, 12-year-old vines. The Merlot spent 8 days in full carbonic maceration, which is the same technique they use in Beaujolais to make Gamay so juicy and fresh. Then another 14 days fermenting off the skins in a concrete egg. The Sauvignon Blanc was fermented whole-cluster in another concrete egg, three days on the skins. Both wines went through full malolactic fermentation, which gives it a rounder, softer texture. Seven months on fine lees in stainless steel. Unfined, unfiltered, as always.
2025 was a hot, dry summer. The vines shut down. Late September rains brought them back. Yields were low, berries were small and concentrated. The nights stayed cool, preserving acidity alongside the sugar.
It smells like watermelon, raspberry, pomegranate, apple blossom, and fresh oregano. The palate is taut and refreshing, with almond, plum skin, cranberry juice, celery, and white pepper. Bright, structured, and a little bit unexpected.
Drink it cold, with grilled fish, summer salads, drink it in the park with friends and an assortment of fun chips.
