Listán Blanco and Albillo
Agustín García Farrais makes wine alongside his parents, Chila and Agustín, both in their seventies, but moving with the energy of thirty-year-olds. The bodega was started by his predecessors after they came back from Cuba in the 1910's. Many of their vines, some planted in 1914, are trained in the ancient cordon trenzado method, a living braid of branches sprawled across the Orotava Valley, in Tenerife.
Having trained in Bordeaux, Agustín works with precision. He vinifies each tiny parcel separately, getting to know them so intimately he can blend a wine of stunning consistency, year after year. This white is a perfect example: 90% Listán Blanco with a 10% kick of Albillo Criollo for electric acidity. All the fruit is hand-harvested and carried in small baskets to keep every berry intact. It’s mostly aged in stainless steel, with a touch of French oak for depth.
This is a vibrant, saline wine that smells of sea spray and wild herbs, with a palate of citrus and stone fruit lifted by that volcanic energy. Just like we like it.
