Sant Sadurní d'Anoia is one of the gems of Penedès. The Raventós family has been here since the 1400s. That's twenty-one generations of the same family, farming the same vineyards, surrounded by thick Mediterranean forest, their own little lake, shaped by the river, all tucked around Turó del Serral hill. The most fascinating thing? The ancient marine fossils scattered in the rocks around their holdings, remnants from when all of this was underwater. 

"De Nit" means "by night" in Catalan, which is wildly romantic if you think about it. I've been drinking magnums of this wine on my birthdays for the past few years, and I plan to keep doing exactly that for as long as humanly possible. 

They call it De Nit because it's their darkest sparkling wine, I mean, it's the rosé! It's a blend of Xarel·lo, Macabeu, Parellada, and an important splash of Monastrell, which adds the darkness to this beautiful sparkling. Traditional method, 18 months on lees, extra brut. It's pale pink, extra delicate. It has lemon pith, the subtle fragrance of hyacinthus in May, white strawberries, a whisper of cassis.  There's texture, a little grip that keeps things interesting, a saline lick that makes your mouth water. 

Have it with cake. Covered in salty vanilla frosting. Or splurge and get a nice selection of ibéricos? Nicely salted. Maybe anchovies too? Honestly, with whatever you want. It's just sensational.
