The Colla family has been making wine in Piedmont for three centuries. Tino Colla (brother of the legendary Beppe Colla) and his niece Federica started Poderi Colla in 1993. Family affair through and through. They believe in a non-interventionist approach, letting each wine express its site and vintage. Sustainability matters as much as the wine itself.
This Dolcetto comes from their Cascine Drago estate, where the vines average 20 years old and sit at 350 metres altitude. The grapes get destemmed, slightly crushed, then macerated on the skins for five to seven days. Malolactic fermentation finishes before winter arrives.
The nose is all about summer plum, macerated cherries, violet flowers, sweet spice, dried herbs. The palate is very redcurrant-y, with such a nice, cooling acidity. We would serve this slightly chilled, with a nice pasta, a beef carpaccio loaded with shaved parmigiano and arugula, lightly grilled meats.
