Luis Pato Baga Espumante Brut

Affectionately called the "King of Bairrada," Pato is the man who rescued the region and its signature grape. He uprooted all international varieties in 2006, betting everything on Portugal. This is 100% Baga from chalky-clay soils, fermented a second time in the bottle and aged on its lees for 5 to 9 months.

It’s so dry it practically crackles, but in the best way. Like a perfectly burnt edge on a fruit tart. It tastes of sun-warmed red plums, black cherries, and a gentle whisper of orange peel and dried herbs.
