François Mikulski grew up in Brussels, spent his summers in Burgundy, fell in love with the farming life, and decided that was it. He worked with his uncle from 1984 to 1991, then in 1992 started his own domaine with his wife Marie-Pierre, renting vines from the family. They started with 4.5 hectares. Now they work with close to 9, spread across Meursault and the surrounding villages.
This Crémant is their sparkling wine, made by their sparkling winemaker. It's a blend of Pinot Noir, Chardonnay, Aligoté, and Gamay. Which is a lot of grapes to say "this is good."
It has a little toastiness, the kind you'd look for in Champagne, but really this is about the fruit. Golden apples, Meyer lemon, lemon drop candies, a whisper of vanilla custard. All kept lively by a good deal of cleansing acidity.
Drink it with fried things, salty things, or just drink it while you're cooking dinner.
