Pinot Grigio
What's the border between orange and rosé? If you've been to the shop and asked us about orange wine, we've probably told you the story. Have you ever noticed that while eating grapes, the skin can be black, but the interior, the flesh, is always translucent? The pigment lives in the skin of the grape, so to make orange wine, you have to macerate the grapes on their skins so that colour penetrates and dyes the flesh.
But then you open the magic box of special grapes and come across the "grey grapes." Like Pinot Grigio. What happens when you macerate Pinot Grigio on the skins feels like it's from another galaxy. The wine ends up with this coppery hue that sits somewhere between a rosé and an orange. It's magical. They call it Ramoro, which means copper in Italian. And it feels right.
It's all about pink grapefruit, ripe apricots, and peach. A summer dream fruit salad with an edge, fresh, yet quite savoury on the palate. Great on its own. But if we were to let you in on an insider tip? It's outstanding with a firecracker shrimp showered with pineapple-habanero relish. Just saying.
