Pinot Noir
In 1929, a group of winemakers in Limoux pooled their tools and know-how to start a cooperative. Today, Cave Anne de Joyeuse is one of only ten in France with the highest quality accreditation, run by growers who all farm sustainably. This is their low-intervention take on Pinot Noir from the southern sun.
The kind of Pinot you wish you found more often: bright, tart, and floral, a mix of red currants, violet candy, and rosehip. The palate is all bright cherries and red fruit, rounded by a soft hint of coconut and vanilla from six months in oak.
Roast a chicken. Open the Pinot.
