He vinifies each tiny parcel separately, getting to know them so intimately he can blend a wine of stunning consistency, year after year. \u003c\/span\u003e\u003cspan\u003eThis white is a perfect example: 90% Listán Blanco with a 10% kick of Albillo Criollo for electric acidity. All the fruit is hand-harvested and carried in small baskets to keep every berry intact.
