Grapes are picked by hand, and the work continues in the cellar with slow fermentation, native yeasts, minimal sulphites. \u003c\/span\u003e\u003cspan class=\"\"\u003eHe came to winemaking later than most, switched careers in his late 30s, and has since become one of the top winemakers in the Loire. His friend Philippe Brand says so. The New York Times says so.
