It fermented in 225 litre oak barrels using a wild yeast starter drawn from his own estate Chardonnay, because why not keep it in the family. Aged 11 months in barrel, bottled by hand.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"ds-markdown-paragraph\"\u003e\u003cspan\u003eThe style is not what you normally see in Ontario. It's more Oregon, more thoughtful, more textured. The nose is vivid: white peach, guava, apricot, nectarine, lemon curd, nice spice. The palate is creamy with a little reductive flintiness and citrus zest. Layered, rounded, finishes long.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"ds-markdown-paragraph\"\u003e\u003cspan\u003eDrink it with something rich, or something creamy.
