Mostly Sauvignon Blanc with a little Chardonnay from 45-year-old vines, grown on sandy clay over limestone bedrock. Hand harvested, wild yeasts, malolactic fermentation, aged in vats. Minimal SO2. No tricks.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"ds-markdown-paragraph\"\u003e\u003cspan\u003eIt smells like apple and pear, lime flower, almond paste, river stones. The palate is subtle white fruit and herbs with this beautiful mineral core. Perfect acidity.
