La Seca brings the limestone character the village is known for. Segovia sits higher and colder, and always gets picked last.

This is young, clean, and precise in a way that inexpensive Verdejo rarely is. Citrus and green apple lead, and it has a classical bitter twist on the finish. The thing that separates real Verdejo from the tropical, sweet-edged version the grape usually gets turned into and that we honestly don't love. That's why we love Cucú so much, because itis the freshest expression of the salt line that runs through the whole cellar. Roughly 10% fermented in used 300-litre barrels and left on its lees until bottling. Enough to put a little texture under a wine that would otherwise be all edge.

Grilled shrimp, ceviche, oysters, white fish are the easy answers to what should you serve this with. But you can also sit it next to asparagus, artichoke, grilled green peppers. Fresh goat cheese. Yum.
