Just a few kilometres from the Gulf of Castellammare, cool sea breezes drift up onto Mount Bonifato, where limestone and sandy soils make for some of the best vineyards on the island.

Alessandro's father grew grapes and made a little wine for the family. Grillo is hardy, drought-resistant, and reliable, both in quality and quantity. The grapes are picked early in September, pressed immediately, fermented and aged in stainless steel, then bottled with just a trace of sulphur.

The wine is fruit forward, with a pleasant pear skin bitterness.
